Cilantro Stand Off

Once again, we found ourselves in a stand off with the cilantro harvest. In weeks prior when low cilantro yield occurred, the Farm Manager had decided that instead of having X amount of larges and Y amount of smalls, we would just fill as many smalls as possible and work from there. If we had the right number of larges and smalls in the form of just smalls, then there wouldn't be any further consideration on the matter. If those two numbers didn't match up, however, there would need to be deliberation on what restaurants weren't getting cilantro for that Friday's deliveries. This felt like a pretty solid band-aid on a bullet hole fix. More time and consideration was put into finding another solution for this delivery day, meaning we had a different strategy. Since we are the ones dropping the deliveries in the freezers ourselves, we know exactly how much product each restaurant has on the various delivery days. For customers that we know have empty microgreen shelves upon every delivery, we aimed to fill exactly what their order was, either larges or smalls. For those who had maybe some extras on their shelves, we would give them smalls if there were enough after the first round of importance. Finally, those with some stock piles would not receive any of the cilantro that Friday. With this model, those who rely on the Tuesday, Friday deliveries to get the product would be happy because their order is fulfilled. Those in the second tier are also happy because they get a delivery. Those in the third tier fall into an ignorance is bliss category because they have so much product that they don't even know what day it came in on. I think this approach has the most positive outcomes in comparison to the other method we had been using in the past.

A random thought I had while delivering: if there were really a purge, I wouldn't rob anywhere besides a restaurant kitchen walk in fridge because there is just so much food and majority of it is already prepped and cooked, therefore you have to do less work once you steal it.
